Count it joy...Really!?!

As I walk thru valleys in my life, I'm reminded of the verse James 1:2 "Consider it pure joy, my brothers and sisters, whenever you face trials of many kinds." God's word encourages us to rejoice when we face trials in our life. 1 Peter 1:6, Romans 5:3, Romans 12:12, Philippians 4:6-7 and more.

I'm thinking....count it joy?...all the time? Really!?!

How do I count it all joy when I'm crying in pain and anxiety over situations out of my control?

Recipe: Mexican Red Rice

My version of Mexican Red Rice

I'm sharing another one of our family favorites today. Over the years, I've had a few friends ask for the recipe and just the other day one of my sister in law's asked for it. So here it is. 

Ingredients:
Rice 3 cups
Oil
Water 4.5 cups total
Salt 1 tsp or to taste
Half of an onion
Large tomato
Sazon season packet

Step 1
Get out your rice cooker. I bought mine off Ebay years ago for around $15 shipped. You can also use a large pot with a lid and do this over the stove if you do not have a rice cooker. 

Step 2
Put a little oil in the bottom of the rice cooker. 
This helps prevent the rice from sticking to the cooker.

Step 3
Add 3 cups of rice to cooker

Homeschool Valentine Party

Homeschool Valentine's Party


What better excuse to have a party than for Valentine's Day!! Today we had our party. There were about 50 kids, give or take, that showed up with their moms. An art lesson was given with some fun painting. We enjoyed a yummy lunch with plenty of sweets. Plus we had a Valentine card exchange.  As I type this, my kids are going through all their Valentine cards they received. Enjoying every one of them! They had so much fun! I enjoy these get togethers as much as my kids do. Getting to visit and talk with other homeschool

Recipe: Chilaquile Casserole

Chilaquile Casserole. Yum. Yum. Yum. 

I was given this recipe years ago from a friend of mine.  I've tweaked it over the years and it's a regular in my house. The kids love it with sour cream on top. 


Ingredients:
Corn tortillas
Oil
Mozzarella Cheese 16 - 24 oz
Salt

Step 1.
Get your homemade enchilada sauce out.
